  1. Preheat oven to 350 degrees.
  2. Butter two 8 inch diameter cake pans. Line bottom with parchment.
  3. Cream 1/2 cup butter in electric mixer.
  4. Add 2 cups sugar, lemon peel, cinnamon and beat until light and fluffy.
  5. Add eggs 1 at a time, beating until smooth.
  6. Dissolve baking soda in milk; blend half into creamed mixture.
  7. Add half of flour and mix just until smooth.
  8. Mix in remaining milk, then baking powder and remaining flour, blending just until smooth.
  9. Fold in chopped apples.
  10. Divide between cake pans.
  11. Bake until tester inserted in centers of cakes come out clean, 35-40 minutes.
  12. Before serving, remove paper from cake layers.
  13. Whip cream with sugar or Apple Maple Syrup until peaks form.
  14. Whip in optional liquor.
  15. Place 1 layer on platter.
  16. Spread 1 inch border of whipped cream around perimeter of cake layer.
  17. Spread top with 1 cup Apple Maple Syrup.
  18. Top with second layer and spread with remaining cup of Apple Maple Syrup.
  19. Spread whip cream around sides of cake.
  20. Spoon remainder into pastry bag fitted with star tip.
  21. Pipe rosettes of cream around top edge of cake or gently spread whipped cream over top of syrup.
  22. Garnish with apple slices if desired.
  23. Serve immediately or refrigerate until serving.


I have substituted dried lemon peel for fresh grated lemon peel. Great airy cake, cream and apple maple syrup are a nice light topping. A family favorite!
